Vinification:
When fully mature, though with a hint of acidity, the Chardonnay & Pinot Noir grapes are turned into wine separately and fermented at approximately 18° Celsius. A part of the Pinot Noir must is fermented and refined in small wooden barrels. Bottling takes place in the spring, decided upon by the winemaker. The wine remains in bottles with yeast for at least 36 months.
Tasting Notes:
Warm and generous sparkling wine with a complex collection of spice and lemon/lime overtones. Some caramel on the mid-palate (and on the nose.) A nutmeg, pinot noir (40%) weighted nose, although chardonnay (60%) is the predominate grape. Made on the champagne model and bears a fine mousse -- less carbonated, more integrated bubbles. Elegant and lengthy finish. If it were a movie star? Katherine Hepburn. Majolini’s sturdiness in the mouth makes for further intrigue as it cellars. A variety of food matches available here ranging from smoked salmon to baked apples. Fun with corn meal fried oysters, fresh fig and almond crostata; watercress, pear and cashew salad; flourless blackout cake. A perfect aperitif.
The winery’s roots are deep and can be traced back to the fifteenth century when the Majolini family settled in Ome. The family began growing grapes almost immediately, and the fact that the family surname – Majolini – is a derivation of the Maiolina vine is proof of this. The most recent generation of the family formed their own wineproducing company in 1981, which has become renowned for its excellent Franciacorta DOCG.
The district of Franciacorta produces Italy’s most exclusive and honored product, the outcome of rigorous selection throughout the production and distribution phases. Majolini’s Franciacorta sparkling wines are produced using Chardonnay and either Pinot Noir or Pinot Blanc grapes. They are obtained by maturing the wine for at least 25 months from the harvest, of which a minimum of 18 months is bottle refermentation on the lees.
For the Millesimato, the maturation period is increased to 37 months, of which 30 are on the lees. As a result of the family’s commitment & determination, Majolini offers some of the best quality wines in the district. Their company – Azienda Agricola Majolini – lies near Ome in the north-eastern part of Franciacorta where the vineyards get the best exposure to the sun. The land is highly terraced and is formed by layers of medolo, which is a type of limestone from which slabs used in printing used to be made. The geological structure of the land ensures there is an ideal supply of mineral salts and nutritional elements which, combined with the mild climate, results in a moderately sized but high quality crop of grapes. The wines produced from the grapes are well-structured and very persistent.
The most important undertakings that guide the Maiolini family are undoubtedly that of a strong sense of continuity to a tradition that has lasted for years and, above all, of producing a wine in which no compromise is made in terms of quality.
