Vinification:
 
Grapes are handpicked in the early morning hours. Aged 12 months in French oak. 10 months surlie.
 
Tasting Notes:
 
A romantic, cool breeze over a warm sea. Pear and almond start, buttery mid-palate, a finish of vanilla, sweet clover and minerals -- this crisp, artfully-balanced chardonnay is a must-take if your New England friends invite you for a seafood bake or if your Northwest relatives have you for Crab Louis. Can’t get to the coasts? Excellent with freshwater finned fare such as baked walleye, fried pike or yellow perch. Radiant gold in the glass, you’ll taste medium tannins with round tones and a full texture (not over oaked!) -- the result of aging in the traditional French “Sur Lie” style. That’s why it’s such a delicious match with shellfish, including mussels. Try it with scallops on a leek puree. Other suggestions: Orzo and zucchini salad; lamb and chicken shish-kabob; peeled lima beans in a ricotta cheese sauce over angel hair pasta; sushi; escarole/blood orange/walnut salad; matzo ball soup. Ella Valley Vineyards Chardonnay is a kosher wine.

In search of the perfect location for grape growing, a Jewish vintner from California chose the Ella Valley - where David defeated the mighty Philistine warrior Goliath - and established a high-quality kosher winery. After eight years of work combining modern technology with traditional methods, the Ella Valley Winery is ready to make its stand.
 
The 700 dunams of vineyards are in three locations - Ness Harim, Kibbutz Nativ Halamad Heh, and Moshav Aderet - and include Merlot, Cabernet Sauvignon, Chardonnay, Muscat, and a few other kinds of grapes. Each vineyard has its unique soil and climate, and these are reflected in the quality of the grapes. The locations allow the grapes to be transported directly to fermentation at the winery while preserving the unique character of the vineyards. Chief winemaker Doron Rav Hon, a graduate of the Faculty of Wine and Vineyards, monitors every aspect of the process - from the sugar conversion in the grapes, to the laboratory gauges on the fermentation containers, to the temperature and humidity in the cellars.
