Vinification:

Fermented in stainless steel tanks for 30 day at max. 36°C. Spontaneous fermentation with natural yeast. Aged minimum 5 years in oak (French, Slavonian and Austrian oak) before bottling. Made from 100% organically grown grapes cultivated at 1200 feet above sea level.

Tasting Notes:

Deep ruby red color with garnet reflections, and a complex bouquet of soft fruits, spices and cacao. It is elegant on the palate with delicate acidity, hints of mixed dried fruits, ripe tannins, & a succulent finish with a hint of spice. Serve with game, venison, red meat dishes, mature cheese, and ham.
Corte Pavone is located in the Casanuova area of Montalcino 1,500 ft. above sea level, one of the loftiest positions in the zone. It is a unique estate in that the winemakers, Rainer and Hayo Loacker, uses Slavonian casks, French Barrique and Austrian oak barrels to age its wines. The finest sites and soils are planted with carefully selected clones of Sangiovese for the production of Brunello. Aromatic plants and herbs such as rosemary, lavender and thyme grow among the vines in the Corte Pavone estate and these and many more characterise the aromas and flavours of the complex and deep 'Brunello di Montalcino' which comes from these vineyards. The crushed grapes are left to ferment slowly with temperature control and the wine is matured for four to five years followed by six months in the bottle prior to release. In both the cultivation of the grapes and in the vinification process, natural and biological practices are adhered to, making all of their wines 100% biodynamic.
