Vinification:

Grapes are handpicked . Temperature controlled stainless steel fermentation. Ages in stainless steel and oak casks.

Tasting Notes:

Paolo Cali somehow tames the usually plush nero d’avola grape, blending it here with forty percent frappato to make a wine of delicacy and drive. Balanced fruits including pomegranate, currant and strawberry (especially), coupled with hearty structure and proper acidity to make Manene a dazzling and penetrating wine. Expected to cellar well but drinking spectacularly now. Fresh and natural in the mouth, leaving an ethereal sense of soil and place. Perfect for cocktails, lovely with fresh green figs, prosciutto wrapped over melon, or antipasto. Other excellent food matches: fresh mozzarella with parsley; pumpkin tortellini; fresh basil and tomato over pasta; pork tenderloin on fava bean leaves; and saucy barbecue ribs. Manene is the nickname of Cali’s son, Emanuele, given to him because it was the first sound (mah-ne’-neh) that Emanuele uttered as a baby. The wine matches the sweetness of that sound. Described figuratively: an angel with a puckish grin. Exceptional value at this price.

Azienda Agricola Paolo Cali’ is a relatively new winery located in the only DOCG area of Sicily - Cerasuolo di Vittoria. To date, the winery has approximately 33 acres of vineyards and cultivates Sicily’s main indigenous varietals - Nero d’Avola and Frappato. The winery’s owner, Paolo Cali, has recently rebuilt the Cantina, updating all of the vinification, bottling and storage equipment. Future plans include reconstructing other buildings on the property for wine tasting and guest accommodations.

The philosophy of Azienda Agricola Paolo Cali is to maintain the character of the traditional Sicilian wines while using modern winemaking techniques, always making sure that quality is the top priority.
